Project: Cook a fall recipe

In Wisconsin, fall is a time when temperatures start dropping along with the leaves. The nip in the air begs for some warmth. Here are a few warm things I love to embrace in fall:

-         A frothy cup of chai tea

-         My knitted slippers

-         My fuzzy, polar bear pajamas – though unless you’re a family member, you’ll never see the pure awesomeness of their fuzzy faces.

Fall is also a time to warm up from the inside out. Here are some seasonal recipes I adore:

Pumpkin Cookies
(recipe from Mr. Right’s mom)

2 c. flour
1 tsp. cinnamon
1 tsp.  soda
1 tsp. baking powder
1/2 tsp. salt
1 c. sugar
1 c. shortening
1 egg
1 c. pumpkin
1 tsp. vanilla
1/2 c. chopped nuts

Cream sugar and shortening. Sift remaining dry ingredients. Add egg, pumpkin, nuts and other ingredients. Fold in dry ingredients. Drop by teaspoonful and bake at 350 degrees for about 12 – 15 minutes.

Caramel frosting
(for pumpkin cookies)

3 Tbsp. butter
1/2 c. brown sugar
1 c. powdered sugar
3 Tbsp. milk
3/4 tsp. vanilla

Melt butter. Add sugar, milk and vanilla. Heat. Spread on warm cookies.

Another hearty fall meal I love that only takes 30 minutes from start to finish is this recipe from Rachel Ray. (I make mine without raisins. Ew, raisins!)

I LOVE chai tea – pumpkin pie in a cup! :)
